Wacky cake.
What you need to know is that Wacky Cake was our family's chocolate cake. We had it on almost every birthday and celebration.. because it is yummy, it was big, and because it does not have eggs (Dad was allergic to eggs). The recipe is so big that Mom would make it in one of those large pyrex dishes.. and we'd have cake for days (well, a few anyway).
So when I was talking with Cami (Gwen's husband and head chef at Garcon restaurant) and he mentioned his allergy to eggs, of course, I shared our recipe. Here's what happened:
Wacky Cake (you have to say it with a French accent now) a la chantilly
Wacky Cake a l'orange
Tropical Wacky Cake (served in the mountains)
Seriously.
And for those of you who are not in the know.. here's the recipe (but you'll have to email Cami about how to do all of that fancy stuff):
Le Wacky Cake
2 cups sugar
3 cups flour
6 tbsp. powdered unsweetened cocoa
2 tsp baking soda
1 tsp salt
2 tsp vanilla extract
1/2 cup melted butter
2 cups water
2 tsp vinegar
Grease and flour pan, Bake at 350 for 40 minutes.
